Located in the heart of the beautiful Margaret River Wine region of Western Australia, Amelia Park Wines was established in 2009 by Jeremy & Daniela Gordon and Peter Walsh. Combining leading edge techniques with traditional winemaking values and practices, winemaker and co-owner Jeremy Gordon believes success starts in the vineyard, where great wines are grown from superior and consistent fruit quality. The resulting wines are elegant, fruit-driven varietals, complex in structure yet easily and irresistibly enjoyable.
The fruit parcels were picked and chilled. The grapes were tipped as whole bunches directly into our press and gently pressed off into a tank. Natural settling occurred overnight and the cloudy juice was then sent to French oak barrels twenty-four hours later. Wild fermentation was completed in barrel and allowed to mature on its own lees for nine months, with minimal stirring during this time, to maintain freshness and natural acidity.
This Chardonnay is 100% wild fermented and matured in French oak for nine months. It has a lovely bouquet of white peach and pear with hints of honey and nougat. The palate is soft with fresh tropical fruit flavours, finishing with citrus and chalky minerality. This wine drinks beautifully now and will benefit from cellaring. Food pairing suggestion: Pork & Fennel Sausages with roasted seasonal root vegetables.
